PYR-FLO include pectin depolymerases and esterases. Together these enzymes hydrolyse both soluble and colloidal pectin substances. The colloids formed by pectin are thereby destroyed and the viscosity of the juice is reduced. PYR-FLO also contains significant arabanase activity which hydrolyses araban haze in pear and other fruit juices.
In the production of sparkling clear juices (apple, pear, grape) the depectinisation of single-strength juice with PYR-FLO accelerates clarification, improves filtration and increases juice extraction.
Depectinisation with PYR-FLO is flexible due to its wide effective pH and temperature ranges. Fruits and vegetables of differing acidity can be treated in cold or hot processes with PYR-FLO.
